Ok so i justed wanted to make sure i have all that i need before i order the parts.

I am going with pacesetter LT's with a 2.5 inch universal x-pipe kit from summit with a couple of 2.5 inch cats and mufflers. Also a pair of mopar gaskets. Is this all i need?

You may need to extend your 02 and cat monitor wires. Also will probably need anti spark plug foulers to pull the cat monitors out of the exhaust stream so you dont throw an inefficiency cat code. That should be it.

I was also just wanting to use exhaust clamps to put the system together and was wondering if there would be any problems going that route? This is my first time doing something like this so i just want to make sure i have everything before i start taking it apart.

not sure how many people have done the exhaust clamps with the longtubes because with the longtubes the cats move back some from the factory location. you have to cut the exhaust and if you cut too much you won't be able to clamp it??? I really don't know. that's why I just had it all welded up after my header install.

why 2.5" cats? the pacesetter collector is 3", you may have problems clamping there unless you have a 3" to 2.5" reducer at the collector, but youll have a ton of clamps in a short span

Oh, you will need 2 3 to 2.5 reducer also. My headers came with them. Forgot about that. I also had a exhaust shop weld it up.

The reason that i was going to go with the 2.5" setup was because i was doing some research and found that the velocity was better than volume. would it be a lot easier to go with the 3" setup because thats what i was originally going to go with?

to stick with the dual 2.5" i'd say get the reducer after the collector and run everything 2.5" but i would weld everything, otherwise you'll have a bunch of leaking clamps.
i personally had my exhaust clamped, i had a few very small leaks, but my exhaust consists of way fewer pieces than yours would. i recently got everything welded and am much happier thumb2

I would just try to get a muffler shop to weld it if you can. I see that you live in Houston also. You can always look at my exhaust if you have any questions about it.
